I am originally from California, where Mexican food is the best, and tacos are comfort food. We don’t do Taco Tuesdays but we do have tacos regularly with spanish rice and black beans (in place of refried pinto beans), along with homemade guacamole and salsa. Tonight we had fish tacos, which were made with blackened catfish, red cabbage slaw and a two bean salad. But as good as they were, and they were, the star was a new treat, Apple Pie Tacos. A fried flour tortilla is sprinkled with a cinnamon sugar mix, then the apple filling is put in the center, whipped cream on top that is also sprinkled with cinnamon sugar (or on the side as we did). Really tasty and super easy to make.
